I'm extremely biased because I own one, but I have to nominate the Datsun 240Z.
It's cozy yet spacious. The three centered gauges show oil pressure, battery amps, time, fuel level and engine temp. The tach and speedo are very simple yet attractive to look at. Everything's within arm's reach. I love the interior of that car.

The F1 LM is probably tied with LP700. I had the pleasure of sitting in that exact car, but was too overwhelmed to take a picture of the cockpit. Here is the exterior (poor pre-iPhone pic):

Oh I know what you mean, my grandpas 56 Chevy custom has a 59-60 wheel but we looked for a 58 because we like the full ring better. Alot of 58 stuff is hard to find. We searched high and low for a 58 impala roof scoop to put on the 56 but never could find one and the metal needed. Went with a 59 impala scoop instead.

But as for automotive cockpits, I would kill for any modern version of Citroen's single spoke wheel. That in my manual S4 would deter any car thieves and friends asking for a spin and ruining my transmission. It would short circuit their brains and I'll have some entertainment.
